- 2 sheets frozen puff pastry, partially thawed
- 300milliliter thickened cream
- 1/4 cup icing-sugar mixture
- 1teaspoons rose essence
- 2 peaches
- 2 plums
- 2/3 cup raspberry jam
- 65grams cherries
- 125grams raspberries
- 50grams mini vanilla meringues
- 1tablespoons honey
- 1/4 bunch thyme, sprigs picked
Description
Covered in jam, cream, peaches, plums, cherries and raspberries, this easy Eton mess tart is the perfect dessert for summertime entertaining.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Line 2 baking trays with baking paper. Place 1 sheet of pastry on each tray. Top with a sheet of baking paper, then a second baking tray. Bake for 15 minutes or until golden brown. Remove from oven. Cool.
Step 2 of 4
Meanwhile, place cream, icing sugar mixture and rose essence in a large bowl. Using a whisk, beat until soft peaks form.
Step 3 of 4
Using a small sharp knife, cut peaches and plums in half and remove stones. Then cut peaches into wedges and slice plums.
Step 4 of 4
Spread tarts with jam, leaving a 1cm border. Top with cream, peaches, plums, cherries and raspberries. Arrange meringues over the top. Sprinkle with thyme. Serve drizzled with honey.
