  • 2tablespoons caster sugar
  • 1/2 small lemon, juiced
  • 375grams raspberries
  • 2 Woolworths lemon myrtle meringues
  • 600milliliter thickened cream, whipped
  • 2tablespoons pistachio kernels, finely chopped

Description

Make your Christmas one step easier with this delicious and simple wreath that uses Woolworths lemon myrtle meringues and a homemade raspberry coulis.

Method

Step 1 of 3

Place sugar, lemon juice and 1 tbs water in a small saucepan over medium heat. Stir mixture occasionally, for 1 minute or until sugar dissolves. Bring to the boil. Add ⅓ of the raspberries. Cover and cook for 1-2 minutes or until raspberries have softened. Remove from heat. Stand for 5 minutes to allow mixture to cool.

Step 2 of 3

Place raspberry mixture in a small food processor. Process until smooth. Strain mixture through a fine sieve.

Step 3 of 3

Arrange meringues in a wreath shape on a serving platter. Dollop with cream. Drizzle with raspberry mixture. Sprinkle with pistachios. Arrange remaining raspberries on top. Serve.
