  • 550grams Woolworths banana loaf
  • 1 1/2tablespoons gelatine powder
  • 85grams strawberry jelly
  • 300milliliter thick vanilla custard
  • 300milliliter thickened cream
  • 100grams white grapes, stalks attached, cut into small clusters
  • 63grams blackberries
  • 1 mango, thinly sliced
  • 1 cup water, boiled

Description

No Christmas is complete without a trifle and this one takes the cake! Fill a banana bread loaf with custard then top with cream, jelly cubes and fresh fruit.

Method

Step 1 of 4

Using a serrated knife, cut a thin layer from top of the cake. Using a small sharp knife, cut around the inside edge of the cake. Scoop out the cake inside, leaving a 1cm-thick cake shell.

Step 2 of 4

Place custard in a large jug. Sprinkle gelatine over 2 tbs boiling water. Whisk until dissolved. Pour cooled gelatine into custard. Pour custard into cake shell. Chill for 1 hour or until firm.

Step 3 of 4

Line a 18cm square cake pan with baking paper. Place jelly powder in a heatproof jug. Add remaining boiling water. Mix well. Pour into the prepared pan. Chill for 2 hours or until set. Cut jelly into small cubes.

Step 4 of 4

Using an electric mixer, beat cream in a large bowl until firm peaks form. Top cake with cream. Decorate with grapes, blackberries, mango and jelly cubes. Serve.
