  • 1.40kilograms Macro free range turkey crown with traditional fruit & nut stuffing
  • 1kilograms Woolworths Gold duck-fat potatoes with truffle butter
  • 350grams Woolworths kaleslaw kit
  • 2tablespoons maple syrup
  • 2 sprigs rosemary, leaves picked

Description

Make this succulent roast turkey crown with traditional fruit and nut stuffing the centrepiece of your next celebration with crispy duck-fat potatoes and kaleslaw.

Method

Step 1 of 5

Preheat oven to 190°C/170°C fan-forced. Leave turkey crown in foil tray with ovenable absorbent pad. Cover with greased foil, ensuring the foil doesn’t touch the roast. Cook for 1 hour and 50 minutes (40 minutes per 500g) or until golden and juices run clear when a skewer is inserted into the thickest part of the roast.

Meanwhile, place potatoes on a baking tray lined with baking paper and reserve butter. Add potatoes to the oven halfway through turkey cooking time.

Remove turkey from the oven and cover loosely with foil. Rest for 10 minutes. Meanwhile, increase oven temperature to 230°C/210°C fan-forced. Remove potatoes from oven and add reserved butter and toss to coat. Cook potatoes for a further 10 minutes or until golden and tender.

Place kaleslaw kit in a large bowl. Add dressing and toss to combine.

Transfer turkey to a serving board and remove the netting. Brush turkey with maple syrup. Transfer potatoes to a serving bowl. Add rosemary and season with pepper. Serve turkey with kaleslaw and potatoes.
