Almond Christmas Cake

- 200grams unsalted butter, chopped
- 2packets dried mixed fruit
- 1/2 cup brandy
- 1/4 cup apricot jam
- 3/4 cup brown sugar
- 1/2teaspoons bicarbonate of soda
- 3 free range eggs, lightly beaten
- 1 1/2 cups Lucky Almond Meal
- 1/3 cups self-raising flour
- 2teaspoons mixed spice
- 110grams pkt Lucky Blanched Almonds
- 110grams Lucky Pine Nuts
- 1/4 cup Lucky Flaked Almonds
- 400grams tub vanilla frosting
Description
Packed full of rich festive flavours, this simple almond Christmas cake with vanilla frosting will definitely impress loved ones.
Method
Step 1 of 4
Place butter, mixed fruit, brandy, jam and sugar in a large saucepan over medium heat. Cook, stirring, for 10 minutes or until melted. Simmer for 5 minutes. Remove from heat. Stir in bicarbonate of soda. Cool completely.
Step 2 of 4
Preheat oven to 150˚C/130˚C fan-forced. Grease a 7cm deep x 20cm (base) round cake pan. Line base and sides with 3 layers of baking paper, extending paper 5cm above edge of pan.

Stir eggs into fruit mixture. Add almond meal, flour and mixed spice. Stir to combine. Roughly chop 3/4 of the blanched almonds. Stir chopped almonds and of the pine nuts into mixture. Spoon into pan and level top. Bake for 2 hours 30 minutes (covering with foil if overbrowning), or until a small sharp knife inserted in the centre of the cake comes out clean. In the last 30 minutes of cooking time, add a tray of remaining nuts to oven to toast.

Cover cake with foil. Invert onto a board and cool completely. Remove cake from pan. Spread with frosting. Top with toasted nuts. Serve.
