- 1 Woolworths crusty baguette French stick, cut diagonally into 1.5cm-thick slices
- 200grams marinated feta in oil, reserving 1/3 cup oil
- 1 bunch basil, leaves picked, stems finely chopped
- 1 1/3 cups pitted Kalamata olives
- 1/4 cup drained capers, reserving 2 tbs pickling liquid
- 3 tomatoes, finely chopped
- 1/2 small red onion, finely chopped
- 1tablespoons red wine vinegar
- 1/2 cup Woolworths Macro basil pesto dip
- 200grams cheddar, thinly sliced
- 400grams red grapes
Description
A refreshing and flavourful grazing board is just what your party needs. Try this tasty take on a charcuterie board with DIY brushetta on homemade herb bread.
Method
Step 1 of 5
Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.
Step 2 of 5
Arrange bread on tray and drizzle with 2 tbs feta oil. Sprinkle with basil stems, then bake 12 minutes or until bread is golden and crisp.
Step 3 of 5
Meanwhile, place olives, capers and their pickling liquid, of the basil leaves, and remaining feta oil in a food processor and process until a paste forms. Transfer to a small bowl and season with pepper.
Step 4 of 5
Finely chop half of the remaining basil leaves. Combine tomato, onion, vinegar and chopped basil in a small bowl. Season.
Step 5 of 5
Arrange olive and tomato mixtures, bread, pesto, cheeses and grapes on a large board. Scatter over remaining basil. Serve.
