  • 8 mini flour tortillas
  • 5milliliter extra virgin olive oil cooking spray

  • 1 red onion, finely chopped
  • 500grams beef mince
  • 1packets 35g taco seasoning
  • 2 limes
  • 160grams Mix-a-Mato® tomatoes, finely chopped
  • 1/2 bunch coriander, leaves picked, finely chopped
  • 1 avocado
  • 2 drops Tabasco sauce
  • 1/4 iceberg lettuce, finely shredded
  • 1/4 cup pickled jalapeño
  • 2/3 cup Woolworths smokey chipotle cheddar & tasty cheese shredded blend

Description

Make entertaining easy with this Mexican-inspired board complete with crunchy tortilla cups, seasoned mince and a selection of tasty toppings.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Grease 8 holes of a 12-hole, ⅓-cup capacity muffin pan. Line 8 holes with tortillas, crimping as required, to form a cup. Lightly spray with oil. Bake for 10 minutes or until golden. Stand for 5 minutes to cool slightly (tortillas will firm up).

Meanwhile, heat oil in a large frying pan over medium-high heat. Add half of the onion and cook for 3 minutes or until softened. Add mince and cook for 8 minutes, breaking up with a wooden spoon, or until browned. Add taco seasoning and 3/4 cup water. Reduce heat to medium and simmer for 10 minutes or until slightly thickened. Transfer to a serving bowl.

Step 3 of 4

Juice 1 lime. Combine tomato, coriander and half of the lime juice in a bowl. Season. Mash avocado until almost smooth and add Tabasco and remaining lime juice. Season and stir to combine.

Step 4 of 4

Cut remaining lime into wedges. Arrange tortilla cups on a board with mince mixture, tomato salsa, guacamole, lettuce, jalapeño, cheese and lime wedges. Serve.
