- 330grams cheese
- 110grams selection of green and black olives
- 220grams carrots, roasted, cut into strips
- 500grams kent pumpkin, roasted, cut into wedges
- 200grams broccolini, blanched and ice water dipped
- 500grams olive bread
- 200grams hummus
- 200grams salami slices
- 120grams rocket
- 500grams sultanas (optional to serve)

Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Arrange pumpkin and carrots in a large roasting pan. Season and drizzle with extra virgin Australian olive oil and roast for 30-35 minutes.
Step 2 of 3
Blanch the broccolini in a large pot of boiling salted water for 2 minutes. Drain immediately and immerse in a bowl of ice water, remove and set aside.
Step 3 of 3
Stack six cubes of Meredith Dairy Marinated Goat Cheese with your roasted carrots and brocollini on a serving plate. Slice the bread and salami. Arrange the roasted pumpkin wedges and other ingredients in serving bowls to complete your rustic grazing platter.
