  • 200grams broccolini, blanched and ice water dipped
  • 500grams olive bread
  • 200grams hummus
  • 200grams salami slices
  • 120grams rocket
  • 500grams sultanas (optional to serve)

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Arrange pumpkin and carrots in a large roasting pan. Season and drizzle with extra virgin Australian olive oil and roast for 30-35 minutes.

Step 2 of 3

Blanch the broccolini in a large pot of boiling salted water for 2 minutes. Drain immediately and immerse in a bowl of ice water, remove and set aside.

Step 3 of 3

Stack six cubes of Meredith Dairy Marinated Goat Cheese with your roasted carrots and brocollini on a serving plate. Slice the bread and salami. Arrange the roasted pumpkin wedges and other ingredients in serving bowls to complete your rustic grazing platter.
