Cocktail Franks Grazing Platter

- 120grams tasty cheese, cut into 12 x 2cm cubes
- 2 Primo cabanossi sticks, cut diagonally into 1cm slices
- 12 pitted green olives
- 12 cocktail skewers
- 1/4 cup white wine vinegar
- 1tablespoons caster sugar
- 1/2teaspoons salt
- 1 small red onion, thinly sliced
- 1/2packets Primo cocktail franks
- 1/2packets Primo prosciutto, halved lengthways
- 1 bunch asparagus, trimmed
- 1tablespoons extra virgin olive oil
- 1/4 cup tomato sauce
- 2tablespoons Dijon mustard
- 12 mini hotdog brioche buns, warmed
- 1/4 bunch basil, leaves picked, to serve
Description
Arrange cocktail franks, bread rolls, cabanossi skewers and prosciutto-wrapped asparagus on a board for a scrumptious savoury grazing platter like no other.
Method
Step 1 of 5
Thread cheese cubes, half the cabanossi and olives onto cocktail skewers. Place in a serving dish. Set aside until ready to serve.
Step 2 of 5
Combine vinegar, sugar and salt and cup boiling water in a small bowl. Add onion. Set aside for 10 minutes, then drain.
Step 3 of 5
Meanwhile, half fill a large saucepan with water. Bring to the boil over medium-high heat. Reduce heat to low and add franks to pan, making sure not to boil them. Heat for 4-5 minutes, or until heated through. Transfer to a serving dish.
Step 4 of 5
Meanwhile, wrap 1 piece of prosciutto around each asparagus spear and place on a plate. Drizzle with oil and season with pepper. Heat a frying pan over medium heat. Cook asparagus for 2 minutes each side or until prosciutto is golden and asparagus is tender.
Step 5 of 5
Arrange cocktail franks, tomato sauce, mustard, pickled onion, buns and remaining sliced cabanossi on a serving board. Add asparagus and cabanossi skewers. Sprinkle with basil leaves. Serve.
