  • 285grams piquillo peppers, drained and cut into strips
  • 400grams canned corn kernels, drained
  • 2 carrots, shredded
  • 1 lebanese cucumber, cut into thin strips
  • 250grams cherry tomatoes, halved
  • 30grams baby spinach leaves
  • 1 small red onion, thinly sliced

Description

This salad looks as good as it tastes, with corn, spinach, peas, piquillo peppers and pasta shells.

Method

Step 1 of 2

Cook pasta according to packet instructions, reserving ¼ cup of cooking liquid. Drain and refresh under cold water. In a bowl, add pasta, pesto and reserved pasta liquid. Stir to combine and set aside to cool.

Step 2 of 2

Add peas to the base of a 20cm-wide, 12-cup capacity trifle dish. Top with pasta mixture, then capsicum, then corn, then carrot, then cucumber, then tomatoes, then spinach and then onion.
