- 1/2 cup sauerkraut

Description
This recipe is a take on a deconstructed Reuben sandwich with tender sweet potato topped with shaved pastrami, Swiss-style light cheese and sauerkraut.

Cooking tip:Sandwich presses are very versatile. Consider frying up bacon or chicken strips next time you fire one up.
Method
Step 1 of 4
Preheat a sandwich press and line with a sheet of baking paper. Add potato.
Step 2 of 4
Cover potato with a second sheet of baking paper and close the lid.
Step 3 of 4
Cook for 8 minutes or until potato is tender.
Step 4 of 4
Transfer potato to a serving plate. Spread with Dijonnaise. Top with sauerkraut, pastrami and cheese. Season with pepper. Serve with extra Dijonnaise.
