Cheat's Strawberry Slab Cake

- 1/2teaspoons ground cinnamon
- 350grams buttermilk pancake shaker bottle
- 250grams strawberries
- 20grams unsalted butter, melted
- 1tablespoons caster sugar
- 1 cup spreadable cream cheese, to serve
Description
Loaded with fresh strawberries, this soft buttermilk slab cake is the perfect sweet accompaniment to any picnic spread. Best served with cream cheese!
Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Grease a 16x26cm (3cm deep) slice pan. Line base and sides of pan with baking paper, extending paper 2cm above pan.

Add cinnamon and 2 1/2 cups water to pancake mix. Secure lid and shake until well combined. Pour mixture into prepared pan. Hull and slice half of the strawberries. Arrange strawberry slices on top. Bake for 12-15 minutes or until the cake springs back when gently pressed. Remove from the oven. Trim baking paper to sit flat with edge of pan.

Heat oven grill on high heat. Brush cake with melted butter and sprinkle with sugar. Grill cake for 1-2 minutes or until golden. Cool completely in pan. Cut into pieces. Serve with cream cheese and remaining strawberries.
