Description

In this cool take on the Australian classic, lamingtons and raspberries are stacked to the max with vanilla ice-cream. A perfect summary treat.

Method

Step 1 of 4

Grease and line a 10x21cm (base) 7cm-deep loaf pan with baking paper, allowing paper to overhang on two sides for handles. Cut lamingtons in half horizontally. Place half the lamingtons, cut-side up, over the base of the pan.

Step 2 of 4

Place ice-cream in a large bowl. Reserve 1/2 cup raspberries and place in fridge until required. Add remaining raspberries to ice-cream and stir to combine.

Step 3 of 4

Spoon half of the ice-cream mixture over lamingtons and level the surface. Top with remaining pieces of lamington, cut-side up. Then top with remaining ice-cream mixture and smooth surface. Freeze for 6 hours or overnight, until firm.

Step 4 of 4

Turn out onto a plate. Cut into slices and serve with reserved raspberries.
