  • 1/4 cup vodka
  • 2tablespoons triple sec
  • 1 1/2 cup unsweetened cranberry juice
  • 1/4 cup caster sugar
  • 1tablespoons gelatine
  • 250grams plain sweet biscuits
  • 175grams unsalted butter, melted
  • 2tablespoons gelatine powder
  • 3 limes
  • 2 cans sweetened condensed milk 397g
  • 1/2 cup dried cranberries

Description

A cosmopolitan in dessert form: what's not to love? The buttery biscuit base, creamy sweetened condensed milk filling and delicious cranberry jelly topping will certainly hit the spot.

Setting a bowl over a pot of simmering water is often referred to as "double boiler". Ensure that the bowl does not touch the simmering water, so that you're only getting indirect and gentle heat when cooking.

Method

Step 1 of 4

Grease a 3cm-deep, 18x28cm slice pan. Line base and sides of pan with baking paper, extending paper 2cm above pan.

Blitz biscuits in food processor. Add butter. Pulse to combine. Press crumb into base of pan. Chill.

Step 3 of 4

Place 1/4 cup boiling water in a small bowl. Sprinkle with gelatine and stir to combine. Stand to cool slightly. Juice 2 limes. Combine condensed milk and 1/3 cup lime juice in a bowl. Add strained gelatine mixture and whisk until combined. Fold in cranberries. Pour over biscuit base, then chill for 1 hour, or until set.

To make jelly, place vodka, triple sec, juice and sugar in a small saucepan and bring to the boil over low heat. Meanwhile, place gelatine and 2 tbs warm water in a small bowl, mixing to combine. Remove pan from heat and add gelatine mixture, stirring to dissolve. Add 1 cup cold water and 1/3 cup lime juice and stir to combine. Cool completely. Transfer mixture to a jug. Pour jelly over the set condensed milk layer. Chill slice for a further 4 hours or until set. Slice remaining lime into rounds. Cut slice into pieces and serve topped with lime slices.
