  • 400grams tub vanilla frosting
  • 2packets Woolworths mint cookies & cream mudcake
  • 60grams dark chocolate, roughly chopped
  • 1/3 cup thickened cream
  • 200grams pkt Woolworths Choccy Mints biscuits
  • 1 sprig mint, leaves picked

Description

Impress loved ones with this easy yet impressive mint cookies and cream layered mudcake recipe that combines two Woolworths mudcakes.

Method

Step 1 of 6

Place frosting in a bowl and stir to combine.

Step 2 of 6

Place 1 cake, icing-side up, on a large plate. Spoon 1/4 cup frosting onto top of cake and, using a spatula, evenly spread to cover top. Sandwich with remaining cake, icing-side down, gently pushing down to level cake.

Step 3 of 6

Spread top and side of cake with remaining frosting to cover. Refrigerate for 20 minutes to chill.

Step 4 of 6

Meanwhile, place chocolate and cream in a medium microwave-safe bowl. Microwave on high for 1 minute, stirring halfway through with a metal spoon, or until chocolate is melted and smooth. Set aside for 20 minutes to slightly thicken.

Step 5 of 6

Carefully spoon chocolate mixture over top of cake and allow to drip down side of cake. Chill for 5 minutes or until almost set.

Step 6 of 6

Cut half of the biscuits in half. Decorate top of cake with whole and halved biscuits, and mint leaves. Serve.
