Coffee syrup
- 1/2 cup strong brewed coffee, cooled
- 1/2 cup caster sugar
- 200grams dark chocolate, roughly chopped
- 2 free range eggs
- 2tablespoons caster sugar
- 1/4 cup vodka
- 1/4 cup coffee liqueur
- 1/4 cup strong brewed coffee, cooled
- 300milliliter thickened cream
- 200milliliter double cream
Description
Nothing says festive decadence quite like this rich espresso martini mousse. This cocktail dessert comes together with ease, making a simple yet elegant mousse that will impress any crowd.
Method
Step 1 of 5
Place chocolate in a microwave-safe bowl. Microwave on high in 30-second intervals, stirring between, until melted. Set aside to cool slightly.
Step 2 of 5
Meanwhile, place eggs and sugar in the bowl of a stand mixer fitted with a whisk attachment. Beat on high for 3 minutes. Fold egg mixture into chocolate mixture. Add vodka, liqueur and coffee. Fold to combine.
Step 3 of 5
Place thickened cream in the clean mixing bowl of a stand mixer fitted with a whisk attachment. Beat cream for 3 minutes, or until thick peaks form. Fold cream into chocolate mixture, in batches.
Step 4 of 5
Divide mixture among 8 small glasses. Set aside in the fridge for 2 hours, or until chilled and set.
Step 5 of 5
To make coffee syrup, combine coffee and sugar in a medium saucepan over low heat. Cook, stirring occasionally, for 5 minutes or until mixture is thick and syrupy. Allow to cool completely. To serve, top mousse with double cream and drizzle with coffee syrup.
