  • 385grams jar hulled tahini
  • 1/4teaspoons salt
  • 1 3/4 cup caster sugar
  • 1/2 cup unsalted pistachio kernels, finely chopped
  • 2tablespoons rose petals

Description

Creamy, gorgeous and a perfect giftable treat, this Turkish helva treat is studded with pistachio and decorated with rose petals.

Method

Step 1 of 3

Grease and line a 11x21cm rectangular loaf pan with baking paper, allowing paper to overhang long sides for handles. Place tahini and salt in a large bowl.

Step 2 of 3

Place sugar and ½ cup water in a medium heavy-based saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves. Increase heat and bring to the boil. Boil, without stirring, for 3-4 minutes or until mixture thickens and is syrupy (or reaches 121°C on a candy thermometer) but does not colour. Remove from heat. Allow bubbles to subside.

Step 3 of 3

Quickly stir sugar syrup into tahini along with ¼ cup pistachio. Quickly transfer to prepared pan and smooth surface. Top with remaining pistachio and rose petals. Refrigerate for 2 hours or until firm. Cut into slices to serve.
