  • 3 medium banana, peeled and mashed
  • 100grams unsalted butter, keep some for the baking dish
  • 120grams sugar
  • 190grams self raising flour
  • 2 medium eggs, free range
  • 1teaspoons bicarbonate soda
  • 1 pinch salt

A simple banana bread recipe that is spongey in texture.

Method

Step 1 of 5

Pre-heat the oven to 180°C/160°C fan-forced.

Step 2 of 5

In a mixing bowl, combine the butter with the sugar and eggs and combine fully.

Step 3 of 5

Add the salt and baking powder and incrementally add the flour.

Step 4 of 5

Lastly fold in the mashed bananas.

Step 5 of 5

Lightly butter a loaf tin and empty the dough in and level out. Bake for 60 minutes or until cooked through.
