Description

These muffins can be easily frozen and are perfect for packed lunches.

Method

Step 1 of 5

Preheat your oven to 180 degrees fan forced. Gather up all of your ingredients. I used frozen bananas but you can also use ripe bananas.

Step 2 of 5

Add all of your ingredients into a food processor or blender. Blend them until the oats are chopped finely and the ingredients are combined.

Step 3 of 5

Line a cupcake tray with 12 liners. Equally divide the mixture into each of the liners so you have 12 similar sized muffins.

Step 4 of 5

OPTIONAL- I added a square of dark chocolate to each muffin and covered it with more mixture. You could add berries, nuts or leave them plain. Place in the oven and cook at 180 degrees for 20 minutes.

Step 5 of 5

Remove from the oven and allow to cool on a wire rack. They are delicious fresh and warm or you can keep them in an airtight container for 5 days or alternatively freeze them and grab them as needed.
