  • 3/4 cup milk
  • 1 cup white sugar
  • 100grams unsalted butter, softened
  • 3 ripe bananas, mashed
  • 1/2teaspoons bicarbonate of soda
  • 2 eggs
  • 1/2 cup walnuts, roughly chopped (optional)

Method

Step 1 of 3

Preheat oven to 180°C. Grease and line a 20 x 10 x 7cm (7-cup capacity) deep loaf tin with baking paper.

Step 2 of 3

Beat butter and sugar together with electric beaters until pale and creamy. Add eggs, one at a time, and beat until just combined. Add vanilla and beat until combined.

Step 3 of 3

Add flour, bicarbonate of soda and milk alternatively. Stir in mashed banana and 3/4 of choc chips and walnuts, if using. Stir until combined. Pour mixture into prepared pan, smooth top and sprinkle with remaining choc chips. Bake for 45 minutes or until a skewer comes out clean when inserted into centre of the cake. Stand for 10 minutes before turning out onto a wire rack to cool. Slice and serve.
