- 1/2 cup desiccated coconut
- 1/2 cup raw sugar
- 1/4 cup plain flour
- 1/4 cup self raising flour
- 125grams unsalted butter, melted
- 1teaspoons ground cinnamon
- 70grams sultanas
- 1 1/2 cup rolled oats
- 2 eggs, lightly beaten
- 100grams dried apple, finely chopped

Method
Step 1 of 4
Preheat oven to 180°C. Line 2 baking trays with baking paper.
Step 2 of 4
Combine dried apple, sultanas, rolled oats, desiccated coconut, raw sugar, each plain and self-raising flours and ground cinnamon in a large bowl.
Step 3 of 4
Make a well in centre and add butter and eggs, stir until combined. Drop heaped spoonfuls onto trays. Bake for 15 minutes until golden. Cool on trays for 5 minutes.
Step 4 of 4
Transfer to a wire rack. Repeat with remaining mixture. When completely cold, store in an airtight container.
