- 125grams unsalted butter
- 1/3 cup maple syrup
- 2 1/2 cup rolled oats
- 2/3 cup wholemeal self-raising flour
- 1 egg, whisked
- 1 cup goji berries

Method
Step 1 of 4
Preheat oven to 170°C. Spread oats on a large baking tray. Bake for 10 minutes or until lightly toasted.

Meanwhile, melt butter and syrup in a small pan over medium heat until smooth. Cool.
Step 3 of 4
Transfer oats to a large bowl. Stir in flour and berries. Stir egg into butter mixture, then add to oat mixture and stir well to combine.
Step 4 of 4
Line 2 baking trays with baking paper. Shape heaped tablespoons of mixture into rough cookies and place on trays. Bake for 12-15 minutes or until golden. Cool on trays for 5 minutes then transfer to wire racks to cool completely. Store in an airtight container for up to 1 week.
