  • 2 1/2 cup ripe banana, mashed

  • 1/4teaspoons bicarbonate of soda
  • 1 passionfruit, pulped
  • 1 cup light olive oil
  • 3 eggs, lightly whisked
  • 3/4 cup brown sugar, firmly packed

Method

Step 1 of 4

Preheat oven to 180°C. Line a 10x20cm loaf pan with baking paper, allowing the sides to overhang.

Sift the flour, cinnamon, baking powder, bicarbonate of soda and a good pinch of salt into a large bowl. Stir in brown sugar and make a well in the centre. Whisk oil, egg and vanilla together. Stir into dry ingredients until just combined. Stir in mashed banana.

Step 3 of 4

Pour mixture into prepared pan and smooth the surface. Bake for 11/4 hours or until cooked when tested with a skewer. Cool in pan for 10 minutes then turn out onto a wire rack to cool completely.

Step 4 of 4

For the icing, sift icing sugar mixture into a heatproof bowl. Stir in butter and passionfruit pulp until a smooth thick paste forms. Place bowl over a saucepan of simmering water until the icing is pourable. Spoon icing over cooled loaf and leave to set.
