- 2tablespoons olive oil
- 500grams scotch pork fillet steaks, patted dry
- 2 onions, peeled and finely sliced
- 3tablespoons taco seasoning
- 2 bay leaves
- 400grams diced tomatoes, canned
- 8 tortillas
- 1 avocado, sliced
- coriander, roughly chopped
- 1 lime, cut into wedges
Description
These simple pulled pork tacos are so easy to make, you can double the recipe to have delicious leftovers.
Method
Step 1 of 3
In a heavy bottomed pot, heat 1 tablespoon of olive oil over medium heat. Cook the pork until all the sides are browned, for about 4 minutes. Set aside.
Step 2 of 3
In the same pan, add the rest of the olive oil and cook the onions until translucent for about 7 minutes. Tip in the taco seasoning and bay leaves and let it cook for about a minute. Stir in diced tomatoes and return the pork and the juices into the pot. Reduce the heat to low. Allow it to simmer for about 1 hour 30 minutes or until pork is tender.
Step 3 of 3
Discard the bay leaves. Take out the pork and shred using two forks. Return the pork to the sauce and let it simmer again for until the sauce is thick. Warm up the tortillas, spoon the pork and top with avocado slices and coriander. Serve with lime wedges on the side.
