- 4tablespoons vegetable oil
- 225grams andouille sausage, sliced
- 1 red onion, peeled and finely diced
- 2 stalks celery, peeled and diced
- 1 green capsicum, diced
- 2tablespoons flour
- 2tablespoons Cajun seasoning
- 1L chicken stock
- 2 dried bay leaves
- 450grams frozen seafood mix, thawed and drainedingredient tip
Description
This easy version of Cajun gumbo is perfect for a week night dinner served on top of steamed rice.
Method
Step 1 of 3
In a pot over medium-high heat, add 2 tablespoons of oil and sausage. Once browned, remove with the slotted spoon and set aside. Add the rest of oil and saute the onions, celery and green capsicum until translucent.
Step 2 of 3
Add the flour and cajun seasoning. Cook while constantly stirring for about two minutes or until the vegetables turn light brown. Stir in the stock and bay leaves. Simmer for about 10 minutes.
Step 3 of 3
Tip in the sausages and seafood. Let it simmer for about 5 minutes, or until the seafood is cooked.
