  • 680grams prawns, peeled, deveined and dried
  • 425grams pineapple slices, drained and cut into quarters
  • 2 capsicums, cut into strips
  • 1 red onion, peeled and sliced
  • 1tablespoons Jamaican jerk seasoning
  • 2tablespoons olive oil, deseeded and thinly sliced
  • 15grams coriander, chopped
  • 1 lime, cut into wedges

Description

This Jamaican spiced prawn sheet pan dish is great paired with brown rice for a hearty and easy meal.

Method

Step 1 of 3

Preheat the oven to 220°C/200°C fan-forced.

Step 2 of 3

In a large sheet pan lined with aluminum foil, mix the prawns, pineapple slices, capsicum, red onion, jamaican jerk seasoning and olive oil.

Step 3 of 3

Bake in preheated oven until the prawns are cooked, about 15 minutes. Sprinkle with coriander and a spritz of lime before serving.
