  • 2tablespoons brown sugar
  • 40milliliter olive oil, divided
  • 1 medium lemon, juiced
  • 50milliliter soy sauce
  • 2teaspoons chilli garlic sauce
  • 2tablespoons worcestershire sauce
  • 4 sprigs thyme
  • 4 300g pork chops
  • 1 bunch asparagus, trimmed
  • 1/2teaspoons salt
  • 1/2teaspoons pepper
  • 5milliliter non-stick cooking spray

Description

Pork chops marinated in a sweet and spicy brine making them extra moist and juicy with a touch of citrus for extra flavour.

Method

Step 1 of 6

Mix the brown sugar, 25 ml of olive oil, soy sauce, chilli garlic sauce, Worcestershire sauce and thyme together. Add the pork chop to a Ziplock bag or baking dish pouring the marinade overtop, letting the pork chops marinade overnight.

Step 2 of 6

Preheat the grill to medium heat for 10 minutes, patting the pork chops dry using kitchen towel. Toss the asparagus with the remaining olive oil, lemon juice seasoning the asparagus with salt and pepper.

Coat the grill with non-stick cooking spray, adding the pork chop to the barbecue.

Cook each side for 6-8 minutes while brushing with the marinade, giving the pork a quarter turn halfway through cooking each side.

Add the asparagus to grill rotating them until charred.

Step 6 of 6

Once the pork chops have reached 62°C on a kitchen thermometer, remove them from the grill letting them rest for 5 minutes before serving with grilled asparagus.
