- 1 onion, peeled and diced
- 1tablespoons curry powder
- 210grams rice
- 2 cups chicken stock
- 1/2teaspoons salt

Description
This filling, one pan meal is spiced with curry powder and topped with juicy prawns.
Method
Step 1 of 3
In a skillet over medium-high heat, heat the 1 tablespoon of oil and cook the shrimp for 4-5 minutes.
Step 2 of 3
In the same pan, add the rest of the olive oil. Add onion and cook until translucent. Stir in the curry powder and rice. Mix well so that the rice is coated with oil.
Step 3 of 3
Tip in the chicken stock. Reduce the heat and simmer, covered, for 15 minutes or until the rice is tender. Stir in the shrimp and peas and season with salt. Cook for another 2 to 3 minutes. Serve with lemon wedges and cilantro if desired.
