  • 1 cups coconut milk
  • 125grams cherry tomatoes, cut into half
  • 90grams frozen peas
  • 1 lime, cut into wedges

Description

This delicious Thai salmon curry can be ready in just a few minutes, serve it with piping hot rice and you have a dinner that's better than takeout.

Method

Step 1 of 3

Pat dry the salmon fillets. Season with 1 tsp pf fish sauce. Heat oil in a pan over medium-high heat and sear the salmon fillets for 1-2 minutes per side or until brown. Set aside.

Step 2 of 3

In the same pan, add Thai green curry paste and stir around. Tip in the coconut milk, fish sauce and cherry tomatoes. Let it simmer for 3 minutes.

Step 3 of 3

Put the salmon fillets back in the sauce and add the peas. Cover and simmer for another 5 minutes or until the salmon is cooked. Take off the heat and squeeze over lime juice. Serve with hot rice and extra lime wedges.
