- 2tablespoons olive oil
- 500grams scotch pork fillet steaks
- 1 lemon
- 6tablespoons greek seasoning
- 2 bay leaves
- 1/3-plus 4 tsp cup orange juice
- 2 cloves garlic, minced
- 2tablespoons apple cider
Description
This simple Greek style pulled pork is a great filling for sandwiches, wraps and gyros.
Method
Step 1 of 3
In a heavy bottomed pot, heat 1 tablespoon of olive oil over medium heat. Cook the pork until all the sides are browned, for about 4 minutes.
Step 2 of 3
Tip in the lemon juice, Greek seasoning, bay leaves, orange juice, garlic, apple cider. Reduce the heat to low. Allow it to simmer for about 1 hour 30 minutes or until pork is tender.
Step 3 of 3
Discard the bay leaves. Take out the pork and shred using two forks. Return the pork to the sauce and let it simmer again for until the sauce is thick. You may serve the pulled pork along with tzatziki, red onions, tomatoes and red cabbage on pita pockets, sandwiches or wraps.
