- 2 thin-crust pizza bases
- 2tablespoons tomato pizza sauce
- 200grams Sweet Solanato® tomatoes, halved
- 1 cup shredded mozzarella
- 400grams leftover cooked Woolworths COOK butterflied lamb shoulder with rosemary & mint, slicedingredient tip
- 1 small red onion, halved, thinly sliced
- 1/2 bunch mint, leaves picked
Description
Leftover barbecued lamb and a simple mixture of Sweet Solanato® tomatoes, red onion and mint make for a deliciously easy pizza night.
Method
Step 1 of 2
Preheat oven to 230°C/210°C fan-forced. Line 2 baking trays with baking paper. Place pizza bases on prepared trays. Spread evenly with pizza sauce. Top with tomato and sprinkle with mozzarella. Bake for 10 minutes or until mozzarella melts and bases are crisp.
Step 2 of 2
Arrange lamb and onion on pizza. Bake for 4 minutes or until just heated through. Sprinkle with mint and season with pepper. Serve.
