Description

Mysore pak is a melt in the mouth Indian sweet treat.

Method

Step 1 of 4

Heat the oil and ghee in a large saucepan until the ghee has melted. Remove 1/3 of the mixture and set aside. Whisk in the chickpea flour until smooth.

Step 2 of 4

Place the sugar in a large, wide saucepan and add 125ml of water, bring to the boil and cook for 2-3 minutes until reduced and stringy when pulled with a spoon.

Step 3 of 4

Add the sugar mix to the chickpea flour mix and combine. Stir in the remaining ghee and oil and mix well. Cook on medium low heat for 5 minutes until bubbling and thick, remove from the heat and stir for 1 minute.

Step 4 of 4

Pour the mix into a parchment lined tin and smooth out with a spatula. Leave to cool for 15 minutes, slice and serve.
