  • 200grams caster sugar
  • 3/4 cup water
  • 100grams passionfruit, just flesh and seeds

Description

A tartly sweet and flavoursome sorbet.

Method

Step 1 of 5

Heat up a saucepan and melt the sugar into the water with the lemon zest from 1 lemon for 5 minutes and allow to cool fully.

Step 2 of 5

Blend the passionfruit flesh until smooth.

Step 3 of 5

Once the sugar water has melted, combine with the lemon juice and passionfruit.

Step 4 of 5

Place into a freezer suitable container and place in the freezer for 4 hours. Take out every 30 minutes to mash the mixture up and keep it loose.

Step 5 of 5

Once its cold enough to serve, scoop into serving bowls.
