Method

Step 1 of 3

Preheat oven to 240°C/220°C fan-forced. Cook schnitzels according to packet instructions.

Meanwhile, place cabbage, onion, carrot, parsley, oil and lemon juice in a bowl. Toss to combine. Season.

Step 3 of 3

Thickly slice schnitzels. Divide schnitzels, slaw and rocket among plates. Serve drizzled with extra oil.
