- 2 cloves garlic, crushed
- 4 burger buns, lightly toasted
- 50grams pea shoots, trimmed
- 1 large carrot, peeled
- 1 large Lebanese cucumber
- 3 spring onions, roughly chopped
- 1/2 cup rice vinegar
- 1 lime, rind grated, juiced
- 1tablespoons sweet chilli sauce
- 1/2 cup mayonnaise
- 1teaspoons soy sauce
- 500grams chicken mince
- 1/4 cup caster sugar
- 1tablespoons vegetable oil

Method
Step 1 of 4
Shave cucumber and carrot into long, thin ribbons using a vegetable peeler. Place into a bowl. Whisk vinegar, sugar and 1 tsp salt in a bowl until dissolved. Pour over vegetables and stand for 10-15 minutes. Drain.
Step 2 of 4
Meanwhile, combine chicken, spring onion, garlic, lime rind and sauces in a bowl. Mix well together using your hands. Form into 4 patties.
Step 3 of 4
Heat a heavy-based frying pan over medium heat. Brush patties with oil and cook for 3-4 minutes each side or until cooked through.
Step 4 of 4
Combine mayonnaise with 1 tbs lime juice. Spread on bun bases, top with patties, pea shoots and pickle and finish with bun tops.
