Chicken BLT Burgers With Spicy Ranch Dressing

- 4 grain rolls, split
- 2 chicken breast fillets
- 1 handful iceberg lettuce, finely shredded
- 2 tomatoes, sliced
- 1 1/4teaspoons smoked paprika
- 2teaspoons lemon juice
- 1/3 cup mayonnaise
- 1tablespoons olive oil
- 1tablespoons chives, finely chopped
- 2tablespoons plain low-fat yoghurt
- 4 rashers bacon, rind removed
- 1 pinch dried chilli flakes
- 1 clove garlic, crushed
Method
Step 1 of 5
Place one chicken fillet on a board and press down with your palm. Cut in half horizontally to make 2 thinner fillets. Repeat with other fillet.

Combine oil, lemon juice, 1 tsp paprika and half the garlic in a glass bowl. Add chicken and turn to coat. Cover with plastic wrap and chill for 10 minutes.

Meanwhile, combine mayonnaise, yoghurt, remaining paprika and garlic, chives and chilli in a small bowl. Season to taste.

Preheat a chargrill pan over medium-high heat. Remove chicken from marinade and chargrill for 5 minutes. Turn chicken over and add bacon. Cook chicken for a further 5 minutes or until just cooked through and chargrill bacon for 3 minutes on each side or until crisp.
Step 5 of 5
Spread roll bases with dressing, and top with lettuce, tomato, chicken bacon and bun tops. Serve.
