- 4tablespoons olive oil (save 2 tbs for brushing)
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 800grams chicken breast fillets, skinless, chopped into chunks
- 1tablespoons parsley, finely chopped
- 1teaspoons fresh sage leaves, finely sliced
- 1 clove garlic, finely chopped
- 100grams dates, chopped
- 50grams hazelnuts, roughly chopped
- 2teaspoons Middle Eastern spice mix
- 2 eggs
- 75grams breadcrumbs, fresh
- 400grams tomato sauce
- 1 handful basil leaves, torn
- 1 fresh hot red chilli, finely chopped
- 12 slices baguette, thick slices
- 1 clove garlic, peeled but left whole
- 2 yellow capsicums, grilled, deseeded, and sliced
- 2 red capsicums, grilled, deseeded, and sliced
Method
Step 1 of 3
Mince the chicken in a food processor for 10-15 seconds; be careful not to blend into a paste. Transfer to a bowl, and add the herbs, garlic, dates, hazelnuts, dukkah, eggs, olive oil, and breadcrumbs. Mix together thoroughly, and season with salt and black pepper. Cover with cling film, and chill for about 1 hour.

Preheat the grill to low. Form the chilled chicken mixture into 12 burger-style portions, then brush the burgers with a little extra oil. Grill the chicken burgers for 6-8 minutes on each side until cooked through. Set aside for 15 minutes in a warm place.

Warm through the tomato sauce, with the basil leaves, adding fresh chilli if you like. Lightly brush the baguette slices with olive oil, and toast on both sides under the grill. Lightly rub each slice with the garlic clove. To serve, arrange the bread on a platter. Pile a combination of the yellow and red capsicums, then a chicken burger, on top of each slice. Spoon over a little sauce, and serve.
