- 2 limes, halved

- 1/2 bunch chives, finely chopped

Description
We can’t go past a well-seasoned chicken schnitzel. Chives, cheese and peri peri sauce make all the difference to this crispy dish atop mango slaw.
Method
Step 1 of 6
Preheat oven grill on high. Spray rack with oil and place over a large foil-lined baking tray.
Step 2 of 6
Cut chicken fillets in half through the centre to make 2 thinner fillets.
Step 3 of 6
Combine breadcrumbs, cheese and chives in a bowl. Season. Combine mayonnaise with peri peri sauce, if using, in a separate bowl. Spread top side of each fillet with 2 tsp mayonnaise mixture. Sprinkle evenly with breadcrumb mixture, pressing down firmly.

Place chicken, crumbed side up, on rack. Spray well with oil. Grill for 10-12 minutes or until golden, crisp and cooked through.

Meanwhile, combine coleslaw, mango, juice of 1 lime half and remaining mayonnaise mixture. Season to taste and toss to combine.
Step 6 of 6
Serve schnitzels with mango slaw and remaining lime, cut into wedges.
