  • 3/4 cup brown sugar
  • 1/2teaspoons ground cinnamon
  • 1/2teaspoons baking powder
  • 1/2teaspoons sea salt flakes
  • 1 1/3 cups banana, mashed (see Tip)
  • 1/2 cup vegetable oil
  • 1/4 cup almond milk
  • 2teaspoons vanilla bean paste
  • dairy-free spread (to serve)

Description

Get baking with this moist vegan banana bread recipe. It's the best way to use overripe bananas, it's dairy-free and egg-free, and will be devoured in no time.

Method

Step 1 of 3

Preheat oven to 180°C/160°C fan-forced. Grease a 13 x 24cm (6.5cm deep) loaf pan. Line base and sides with baking paper, extending paper 3cm above long edges.

Place flour, sugar, cinnamon, baking powder and salt flakes in a large bowl, then stir to combine. Make a well in the centre. Add banana, oil, milk and vanilla, then stir to combine. Spoon mixture into pan and smooth top.

Step 3 of 3

Bake for 45 minutes or until a skewer inserted into centre comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely. Serve with dairy-free spread.
