  • 15 almonds
  • 100grams dates
  • 1tablespoons coconut flour
  • 2tablespoons desiccated coconut
  • 1tablespoons chia seeds
  • 1 small carrot, shredded or finely grated
  • 1 1/2teaspoons cinnamon
  • 1teaspoons ginger

Description

A healthier treat to snack on when you get that 3pm craving. Try my blissful treats, they are just the right sweetness to pick you up until dinner time :)

Method

Step 1 of 9

Chop dates and place with almonds in a heat proof bowl.

Step 2 of 9

Boil water and cover dates and almonds, leaving them to stand for at least 15 minutes.

Step 3 of 9

Chop walnuts finely and set aside.

Step 4 of 9

Grate carrot and squeeze as much liquid out as you can.

Step 5 of 9

Once they have been cooled and drained from the water blitz almonds and dates in a food processor until combined.

Step 6 of 9

Add in coconut, coconut flour, cinnamon, ginger and chia seeds and give another blitz until combined.

Step 7 of 9

Mix in walnuts and give a final mix by hand to ensure all ingredients are combined.

Step 8 of 9

Begin rolling process by rolling 1 tsp of mixture into a ball. You may need to compact the mix in your hands to get it to stay together.

Step 9 of 9

Roll balls in extra coconut or chia seeds if you wish.
