Method

Step 1 of 4

Preheat the oven to 180°C (Gas 4).

Step 2 of 4

In a bow, mix the butter with the sugar. Add 1 egg, and mix until combined. Add the flour, and 2 teaspoons of vanilla extract, and combine until the mixture forms a dough. Line 2 baking sheets with greaseproof paper.

Step 3 of 4

Roll the dough into balls the size of walnuts, and place on the baking sheets, then flatten with your fingers.

Step 4 of 4

Bake in batches for 12-15 minutes, until golden, then remove from the oven and transfer to a wire rack to cool completely.
