- 5tablespoons olive oil
- 4 medium figs, halved
- 2tablespoons balsamic vinegar
- 4teaspoons honey, divided
- 2teaspoons wholegrain mustard
- 200grams rocket
- 1 medium red onion, peeled and finely sliced
- 80grams blue cheese, crumbled

Description
Blue cheese, balsamic figs and rare steak make a salad packed with flavour and filling enough for dinner.
Method
Step 1 of 3
Brush the steaks with a little oil and cook in a griddle pan on high heat for 3 minutes on each side for medium rare. Wrap in foil and rest for 5 minutes.
Step 2 of 3
Toss the figs 1 tablespoon of balsamic vinegar and 1 teaspoon of honey. Cook in the griddle pan for 1 minute on each side. Whisk the rest of the vinegar, honey, oil and mustard together in a small bowl.
Step 3 of 3
Add the rocket, figs, red onions and blue cheese to a large bowl, pour over the dressing, toss well and serve with thinly sliced steak on top.
