- 4 large corn cobs
- 1tablespoons canola oil
- 1teaspoons smoked paprika
- 1/2teaspoons cumin
- 1tablespoons chipotle paste
- 1/2 bunch coriander, fresh, chopped
- 1 lime, cut into 4 wedges
Description
Cutting corn on the cob into "ribs" makes it a fun veggie snack.
Method
Step 1 of 3
Carefully slice each corn cob in half down the middle with a sharp knife, and then into quarters.
Step 2 of 3
Add the oil, spices and chipotle paste to a large bowl and toss the corn well to coat each rib.
Step 3 of 3
Heat the air fryer to 190°C and cook the ribs in a single layer (working in batches) for 12-15 minutes, turning halfway through. Serve with topped with chopped coriander with lime wedges on the side.
