- 4tablespoons tikka masala paste
- 200grams carrots, peeled and grated
- 1 large red onion, peeled and finely diced
- 2 cloves garlic, peeled and minced
- 150grams peas, frozen
- 1/2 bunch coriander, fresh, chopped
- 1/2 bunch mint, fresh, chopped
- 12 sheets filo pastry

Description
Air frying these lamb samosas is a great way to cut back on the oil needed to get them nice and crisp.
Method
Step 1 of 4
Heat a tablespoon of oil in a large non-stick pan on a medium high heat and fry the lamb mince for 5 minutes until browned. Add the tikka paste, onions, carrots and garlic and stir well. Cook for 2-3 minutes. Tip into a bowl and mix in the peas and fresh herbs.
Step 2 of 4
Heat the air fryer to 180°C. Lay the filo pastry out on a work top and have the remaining oil and a pastry brush ready.

Place a spoonful of filling on the bottom left corner of one of the sheets, fold over the top right corner to make a triangular shape. Continue folding over until you have a triangular shaped samosa. Repeat with the remaining filling and pastry to make 6 large samosas.
Step 4 of 4
Brush the samosas lightly with oil, place in the air fryer in a single layer and cook for 20 minute until crisp and golden, flipping halfway through.
