- 20grams capers, drained and chopped
- 2 medium lemons, 1 juiced and zested, 1 chopped into wedges
- 2tablespoons parsley, fresh, chopped
- 8 large scallops, shelled, fresh
- 5milliliter olive oil spray
- 2tablespoons olive oil
- 1 clove garlic, peeled and minced

Description
Air frying scallops keeps them juicy and succulent without the need for lots of oil and butter.
Method
Step 1 of 3
Spray the air fryer basket with olive oil spray and add the scallops, leaving space between each. Spray with more oil and cook at 200°C for 5-6 minutes, depending on the size of the scallops.
Step 2 of 3
Whisk the oil, garlic, lemon juice and zest and parsley together.
Step 3 of 3
Serve the scallops drizzled with dressing with lemon wedges on the side.
