  • 2tablespoons olive oil
  • 1kilograms braising lamb, chopped into pieces
  • 1 large onion, peeled and chopped
  • 4 large carrots, peeled and chopped into chunks
  • 3 celery sticks, sliced
  • 200grams swede, peeled and chopped into chunks
  • 1L chicken stock, hot, made with 2 stock cubes
  • 600grams baby potatoes, halved
  • 1/4 bunch parsley, fresh, chopped

Description

Traditional Irish stew is made with lamb, slow cooked with onions and carrots to make a flavourful broth.

Method

Step 1 of 4

Pre-heat the oven to 180°C/160°C fan-forced. Heat half of the oil in a large, deep casserole and cook the lamb in batches for 2 minutes on each side to brown. Remove with a slotted spoon and set aside.

Step 2 of 4

Add the remaining oil, onions, carrots, celery and swede to the casserole and cook for 5-6 minutes. Add the lamb back into the pan with its juices.

Step 3 of 4

Add the stock and potatoes and bring to the boil. Cover with the lid and cook for 1 hour in the oven.

Step 4 of 4

Remove the lid and cook uncovered for 20 minutes to reduce the sauce. Stir in fresh parsley and serve.
