- 2 medium carrot, peeled and chopped
- 2tablespoons canola oil
- 1 medium parsnip, peeled and chopped
- 400grams chickpeas, store bought tin and drained
- 400grams diced lamb
- 1 1/4 cup beef stock
- 2 medium apricots, chopped
- 2 large white onion, peeled and chopped
- 1teaspoons cumin
- 1teaspoons garam masala
- 4 cloves garlic, peeled and diced
- 1teaspoons allspice
- 400grams couscous
- 100grams lentils, cooked as per packet instructions
Description
A deliciously spiced and slow cooked lamb dish.
Method
Step 1 of 7
Pre-heat the oven to 160°C.
Step 2 of 7
Heat up an oven safe dish on the pan with the oil and fry the lamb pieces for 5 minutes while tossing.
Step 3 of 7
Add the onions, garlic, carrot, parsnip and chicken for 6 minutes while mixing.
Step 4 of 7
Add the rest of the ingredients to the oven safe dish apart from the couscous and combine well, cover and place in the oven.
Step 5 of 7
Allow the dish to cook for 45 minutes.
Step 6 of 7
Cook the couscous as per packet instructions and then drain.
Step 7 of 7
Serve the drained couscous with the tagine ingredients from the oven.
