  • 500grams Woolworths COOK roast beef with onion & garlic gravy
  • 200grams button mushrooms
  • 1 large brown onion, cut into thin wedges
  • 100grams middle bacon rashers, fat trimmed, roughly chopped
  • 2tablespoons extra virgin olive oil
  • 600grams washed red potatoes, peeled, chopped into 2cm pieces
  • 50grams olive oil spread
  • 1/3 cup milk, warmed
  • 2 cups frozen peas
  • 1/4 bunch continental parsley, leaves picked

Description

To get slow-cooked flavours without the wait, try this recipe that uses Woolworths slow-cooked roast beef and transforms it into a rich beef bourguignon.

Method

Step 1 of 5

Preheat oven to 210°C/190°C fan-forced. Line a baking tray with baking paper.

Step 2 of 5

Cook beef according to packet instructions. Place mushrooms, onion and bacon on tray. Drizzle with oil, then bake for 25 minutes or until vegetables are tender.

Step 3 of 5

Meanwhile, cook potato in boiling water for 15 minutes or until tender. Drain. Return to pan. Add spread and milk, then mash potato until smooth. Season.

Step 4 of 5

Add mushroom mixture, including cooking juices, to beef mixture, then stir to combine.

Step 5 of 5

Cook peas in a saucepan of boiling water for 1 minute or until just tender. Drain. Divide mash, beef mixture and peas among plates. Serve topped with parsley.
