  • 600grams stewing beef, cubed
  • 2 carrots, chopped about 1 cm thickness
  • 150grams potato, chopped about 2 cm thickness
  • 150grams sweet potato
  • 4 cloves garlic, chopped
  • 1 large onion, halved - sliced
  • 1 cup beef stock
  • 1 can tomatoes
  • 1 can red kidney beans, drained and rinsed
  • 1 zucchini, halved lengthways - chopped 3 cm
  • 2tablespoons olive oil (not required if not doing step 3)
  • salt & pepper (to taste)

Description

A delicious, nutritious winter warmer stew, just set and forget.

Method

Step 1 of 5

Gather all ingredients together, turn Slow Cooker on to low.

Step 2 of 5

To the slow cooker add stock, cherry tomatoes, potato, sweet potato and carrots.

Step 3 of 5

Meanwhile, heat a pan on high heat, add one tablespoon of olive oil. Brown beef quickly in two batches, about 3 - 4 minutes, add to slow cooker. Turn heat down to medium, add the last tablespoon of olive oil, add onions and garlic. Cook for 2-3 minutes, add to slow cooker. Stir well to combine, lid on and cook for 6 hours.

Step 4 of 5

At the 6 hour mark, add zucchini and red kidney beans, stir to combine, check seasoning and cook on low for a further hour, or until root veggies are cooked.

Step 5 of 5

Can change up veggies to - all potato or sweet potato or parsnips, swedes, pumpkin. Can change red kidney beans to - borlotti or butter beans or any other legume. Enjoy.
