  • 1 onion, diced
  • 250grams mushrooms, sliced
  • 4tablespoons tomato paste
  • 500grams diced beef
  • 1tablespoons oil
  • 2 clove garlic, crushed

Method

Step 1 of 6

Heat oil in a saucepan over high heat and cook beef, in batches, until browned. Remove and set aside.

Step 2 of 6

Add onion and garlic to the saucepan, cook for 2 minutes. Add mushrooms and beef to pan, cook for 3 minutes or until mushrooms have softened.

Step 3 of 6

Add carrots, tomato paste and 375ml (1 1/2 cups) of stock. Bring to the boil. Reduce heat and cook for 35 minutes, stirring occasionally.

Step 4 of 6

In a jug or bowl, combine remaining 1/2 cup of stock with cornflour until smooth. Stir into beef mixture. Bring to the boil, stirring constantly.

Step 5 of 6

Cook for 5 minutes, stirring occasionally, until sauce has thickened.

Step 6 of 6

Serve with mash and steamed green beans.
